Back to School Cereal Muffins

 Liam, my 5 year old, starts Kindergarten tomorrow.  I’m not sure who is more excited about it, him or me!  I say that completely joking, I’m guaranteed to shed a few tears over it.

 I have found the Perfect Breakfast Muffin.

  It can be eaten on the run if there’s no time for a sit-down breakfast. 

They are full of good natural ingredients, plus they are fun for kids to make as well.

The Recipe starts off with a bowl of cereal.

It can be any kind of bran flakes or wheat Chex.

 I’ve used frosted wheat.

It just needs to be a cereal that gets soggy in milk. 

 Cereal Muffins

2 cups bran flakes (or other cereal)

1 1/4 cups milk

1 cup whole-wheat flour

1/2 tsp salt

1 tsp Cinnamon

1 tbsp baking powder

4 tbsp butter

1/2 cup sugar

1 egg

2 bananas, peeled and mashed

1/2 cup raisins

  • Pre-heat oven 350
  • Soak the bran flakes in the milk for 10 minutes. sift together the flour, salt, and baking powder.
  • Cream together the butter and sugar, then beat in the egg. stir in alternate spoonfuls of soaked bran flakes and flour mixture. Gently fold in the mashed bananas and the raisins.
  • Line a muffin pan with paper liners and half-fill each one with mixture.
  • Bake in the preheated oven for 30 Minutes.
  • Makes 15 Muffins
