Breakfast Quesadilla

 I have a new daily ritual that I now look forward to everyday, it’s called breakfast!

That may sound silly, but I never really ate breakfast before, and now I really enjoy making it and eating it while being completely present in the moment. 

After I drop my son off at school, I come home to a peaceful and quiet home and I begin to prepare myself breakfast, usually it’s eggs and toast, but even so, everyday I make it a little different, adding different ingredients to it, like cheeses, veggies, and salsas and/or jams, and every day it taste delicious!

I set my place setting with a tall glass of water, a fresh cup of coffee, napkin and utensils.

I sit down and say a little prayer of gratitude and then I stay present as I eat.  I focus on the food, on the taste, the smell, and I enjoy every last bite.  I focus on the quiet of the room. I may stop to look out the window at the morning sun shining in, but I do not let myself get distracted with my phone or  think about my to-do list and what I need to do next.  And you know what?  That is the whole reason why I love breakfast now.  I am totally in tune with it. It’s a moment of peace that I allow myself to have each morning.

Anyhow, the other day I made myself a Breakfast Quesadilla. Have you ever had a Breakfast Quesadilla before? I never had, it was just something I put together in my morning bliss and it turned out to be delicious, so delicious in fact, I took pictures of it so that I could share it with you.

  

First, I scrambled up two eggs with salt and pepper.

Meanwhile, in a larger separate pan that was lightly sprayed with cooking oil, I placed down a large tortilla and piled it with shredded cheddar cheese (Tillamook is the Best!).

Once my eggs were half way cooked, I added in a handful of baby spinach.

As soon as the cheese was melted on the tortilla, and the eggs were fully cooked, I transferred the eggs to the tortilla. added a second tortilla on top and carefully flipped it over.

I don’t know why I’m explaining this in so much detail 😄 I’m sure you already know how to make a freaking quesadilla. Ha Ha, but Anyway.

Cut the quesadilla into triangles, add salsa and/or guacamole and ENJOY!

Now here I made it pretty simple with just egg and spinach, but obviously you could add lots of other ingredients to it too.  Perhaps mushrooms & Swiss or cut up meats, like ham, sausage, or beacon.

I actually made this for my husband one night and I added beacon to it. However, when you add extra ingredients, it makes for a larger quesadilla, which makes it a bit harder to stay together and messier to eat. So if you do add more ingredient, maybe stick to only one egg.

And I also suggest that if you do make this,  be present while you prepare it and be present while you eat it, and enjoy every last bite of it. And trust me, this will make it even more satisfying 🙂

    Yeah, I completely agree that breakfast is the most important meal of the day and it should be healthy. Thanks for sharing the simple and tasty recipe.
