Pomegranate Blue Cheese Ball

Welcome back! Did you have a wonderful Christmas?

We sure did. Its just been so nice and relaxing around here. We’ve spend the last few days hanging out at home in our pj’s and my boys have been having lots of fun playing with all of their new toys from Santa. 

So I’ve made this yummy Pomegranate blue cheese ball the last two Christmas’s and its been such a hit that I wanted to share the recipe with you today. You may even want to make it up for New Year’s Eve. It’s a yummy appetizer that’s perfect for the holidays.

To make this delicious Pomegranate Blue Cheese Ball,  just add these ingredients to a large bowl:

1 oz package of cream cheese, softened.

1 cup of blue cheese.

1/2 cup finely shredded cheddar cheese.

1/4 cup finely chopped green onions.

With an electric mixer, beat until combined.

Using plastic wrap, form mixture into a smooth ball, and  place in refrigerator for 30 minutes.

In the mean time, remove arils from 1 pomegranate.  I find this works best under running water. Discard peels, and dry arils with a paper towel.

After 30 minutes, use your hands to press pumpkin seeds or nuts onto the cheese ball.  

I used pumpkin seeds because I had them on hand and thought the green would look festive next to the red for Christmas. But crushed walnuts, pecans, pistachios, or slivered almonds would all be wonderful as well.

To serve, place cheese ball onto center of platter,  and then add the pomegranate arils around the cheese ball.

When I made this last year, I used the pomegranate arils to cover the cheese ball, It looked pretty at first, but then it turned the cheese ball slightly pink. By adding the arils to the side of the cheese ball, allows it to look appetizing as you add the arils on top of  your cheese covered cracker for a delicious, mouth watering bite.
