Chewy, Crispy, Banana Coconut Chocolate Chip Cookies

My Favorite Go-To Ingredients are Coconut and Golden Raisins. I put them in Everything from Salads, Rice, Cookies, Oatmeal, Muffins  and sometimes I even put them in my scrambled eggs.

Yes, even eggs! Does that sound strange?

Coconut and Golden Raisons make everything taste Sweeter. You should give it a try.  If not in scrambled eggs, then how about in some chewy, crispy, Banana Coconut Chocolate Chip Cookies?

I know, I know, There is A Lot going on in these Cookies.  But let me just tell ya, they are so yummy!

Chewy Crispy Banana Coconut Chocolate Chip Cookies

Ingredients:

1/2 cup butter

1/2 cup packed brown sugar

1/2 cup white sugar

1 egg

1 tsp vanilla

1 cup all purpose flour

1/2 cup crushed cornflakes cereal

1 cup rolled oats

1 tsp baking soda

1/2 tsp salt

1/2 tsp baking powder

1 cup flaked coconut

1 cup chocolate chips

1/4 cup golden raisins

1/2 cup banana (one banana)

  • Preheat oven to 350 degrees
  • In a large bowl, cream together the butter, brown sugar and white sugar until smooth. Stir in the egg, vanilla, and banana and set aside.
  • In a second bowl, mix  together the flour, baking soda, salt, and baking powder.
  • stir the dry ingredients in with the creamed mixture.
  • Add the oatmeal, crushed cereal, coconut, raisins and chocolate chips and mix until combined.
  • Drop dough by tablespoonfuls onto a lightly sprayed cookie sheet. cookies should be about 3 inches apart. Bake for 12 minutes. until light brown.

Makes 3 dozen

Note: there is so much going on in these cookies that if you don’t have one of the ingredients, Don’t worry about it. I think the original recipe didn’t have the banana, chocolate chips or raisins in them. I just make the recipe up as I go along. I think they would also be great with nuts or sunflower seeds.

This recipe is made to play around with. Check your pantry and get creative……But I highly suggest you add Coconut and Golden Raisons. 😊
